IKAN PEPES

Indonesian Version


Bahan :

  • ikan gembung 1 ekor
  • daun pisang ½ pelepah
  • diting dongkrak secukupnya



Bumbu :

  • bawang merah 25 gr
  • bawang putih 10 gr
  • kunyit (dibakar) 5 gr
  • kemiri (digongseng) 10 gr
  • jahe 2 gr
  • asam belimbing 50 gr
  • daun kemangi 1 tangkai
  • cabe rawit 10 gr
  • santan 100 gr
  • garam ½ sdm
  • cabe merah 10 gr

Cara membuat :

  1. ikan dibersihkan dan dicuci, kemudian dilumuri ½ sdm garam dan ½ sdm air garam
  2. bumbu - bumbu dihaluskan kecuali cabe rawit ½ daun kemangi, lalu dilumuri pada ikan
  3. ikan dibungkus dengan daun pisang berbentuk panjang dan disemat dengan biting
  4. kemudian dikukus sampai masak

Ikan Pepes is ones of traditional food in Indonesia, you may find it everywhere in everyplace of restourant, little or big ones. Here i explain to you how to make it.

Provide the following substance :

  • 1 puffy fish
  • ½ banana leaf
  • several diting jack as enought



Ingredients:

  • 25 gr onion
  • 10 gr garlic
  • 5 gr turmeric
  • 10 gr candlenut (fries)
  • 2 gr ginger
  • 50 gr sour star fruit/acid
  • 1 basil sprig
  • 10 gr cayenne pepper
  • Coconut milk 100 gr
  • ½ tbsp salt
  • 10 red chili pepper


Ways of making :

  • fish cleaned and washed, and then give ½ tbsp salt and acid in to all over the fish
  • mashed all seasoning except cayenne pepper and ½ basil sprig
  • then give all mashed seasoning in to all over the fish
  • fish wrapped with banana leaf and shaped with long
  • and then steamed until cooked
