Opor Ayam/Daging


Indonesian Version

Bahan :

  • ayam (1 dada) ¼ ekor
  • atau daging (gading) 1 ons
  • Santan cair 200 cc
  • santan kental 200 cc
  • Minyak goring 2 sdm

Bumbu :

  • bawang merah 2 siung
  • bawang putih 1 siung
  • kemiri 1 buah
  • ketumbar 1 sdt
  • sereh ½ btg
  • lada halus ½ sdt
  • laos 2 rjs
  • daun salam 1 helai
  • garam ½ sdt
  • gula putih ½ sdm
  • air asam 1 sdm

Cara Membuat :

  1. potong ayam 3-4 bagian/daging seperti potongan semur, bersihkan cuci ayam/daging lalu lumuri dengan garam & asam jeruk
  2. haluskan semua bumbu kecuali laos, sereh, daun salam
  3. tumis bumbu sampai harum, masukkan ayam(daging) + santan cair, hingga airnya kental
  4. masikkan santan kental + air asam+gula+daun salam secukupnya, cicipi rasanya
  5. setelah kental dan berminyak, angkat
  6. hidangkan dalam piring lonjong dengan perbandingan 1 : 1
  7. blans maksudnya memasukkan bahan kedalam air mendidih lalu diangkat

provide following substance :

  • ¼ pcs chicken (1 pcs breast)
  • or meat 1 ounce
  • 200 cc liquid coconut milk
  • condenced coconut milk 200 cc
  • 2 tbs palm oil or olive oil

flavor :

  • 2 pcs onion
  • 1 pcs garlic
  • 1 pcs candlenut
  • 1 tsp coriander
  • ½ lemon grass
  • ½ pepper smooth
  • 2 slice of turmeric
  • 1 pcs bay
  • ½ tsp salt
  • ½ tbs white sugar
  • 1 tbs tamarind water

Ways of making :

  • cut the chicken in to 3-4 pieces, washed the chicken / meat, and give the pieces with salt & sour orange
  • smooth all favor except the turmeric, lemon grass, and bay
  • fry spices/favor until fragrant, enter the chicken (meat) + liquid coconut milk until the water is thick
  • put condenced coconut milk + water acid + sugar + bay, taste it
  • after thick and oily, lift
  • served on oval plates in comparison with 1: 1
