Tahu Goreng

Indonesian Version


Bahan :

  • tahu 1 petak
  • daun selada ½ ikat
  • tauge 50 gr
  • timun 1 buah
  • emping 25 gr
  • kacang tanah goreng 25 gr (digiling kasar)
  • bawang goreng 25 gr

Bumbu :

  • 2 siung bawang putih
  • ¼ bh nenas (kecil)
  • 4 buah cabe merah
  • 4 bh cabe rawit
  • 50 gr gula merah
  • ½ sdt garam
  • 1 bh jeruk nipis

Cara Membuat :

  1. tahu digoreng, lalu dipotong dadu (sedang)
  2. sayuran dibersihkan lalu dipotong - potong, timun dikupas lalu dipotong dadu
  3. tauge direndam di air panas lalu ditiriskan
  4. telur rebus diiris tipis dan sisihkan
  5. nenas diparut, lalu dimasak sebentar sisihkan
  6. gula dicairkan (saring) lalu bumbu dihaluskan
  7. campur nenas yang telah dimasak dengan gula merah dan bumbu, aduk rata
  8. hidangkan sayuran dan bahan lain secara berurutan : daun selada, tahu, timun, tauge lalu disiram dengan saus nenas tadi

Tumis Buncis


Indonesian Version

Bahan :

  • buncis 100 gr
  • tomat 50 gr
  • wortel 100 grsantan 100 gr
  • udang basah 100 gr

Bumbu :

  • cabe merah 3 buah ( diiris serong )
  • bawang merah 3 siung (diiris tipis)
  • bawang putih 1 siung ( diiris tipis )
  • daun salam 1 lembar
  • sereh 1 batang
  • jahe 1 ruas jari ( diiris tipis )
  • laos 1 ruas jari ( dimemarkan )
  • garam secukupnya

Cara Membuat :

  1. buncis dibersihkan lalu diiris serong
  2. wortel dikupas, dicuci potong seperti anak korek api
  3. tumis bawang sampai harum, masukkan semua bumbu + udang basah
  4. masukkan wortel, masak hingga layu
  5. masukkan buncis, kemudian masukkan santan masak hingga matang
  6. terakhir masukkan tomat iris, garam cicipi rasanya
  7. hidangkan dalam piring lonjong

  • kemiri 1 buah
  • ketumbar 1 sdt
  • sereh ½ btg
  • lada halus ½ sdt
  • laos 2 rjs
  • daun salam 1 helai
  • garam ½ sdt
  • gula putih ½ sdm
  • air asam 1 sdm

Cara Membuat :

  1. potong ayam 3-4 bagian/daging seperti potongan semur, bersihkan cuci ayam/daging lalu lumuri dengan garam & asam jeruk
  2. haluskan semua bumbu kecuali laos, sereh, daun salam
  3. tumis bumbu sampai harum, masukkan ayam(daging) + santan cair, hingga airnya kental
  4. masikkan santan kental + air asam+gula+daun salam secukupnya, cicipi rasanya
  5. setelah kental dan berminyak, angkat
  6. hidangkan dalam piring lonjong dengan perbandingan 1 : 1
  7. blans maksudnya memasukkan bahan kedalam air mendidih lalu diangkat

Kari Daging Ayam

Bahan :

  • danging ayam 1 kg
  • santan cair 4 gelas
  • kentang kecil ¼ kg
  • santan kental 2 kg

Bumbu :

  • bawang merah 1 ons
  • lombok merah1 ons
  • kayu manis 3 cm
  • biji kapulaga 4 butir
  • jahe 1 rj
  • tomat merah 3 buah
  • bawang putih 5 siung
  • cengkih 4 biji
  • bunga kapulaga 2 biji
  • daun kare ½ ikat
  • gula merah secukupnya
  • asam jawa secukupnya
  • garam secukupnya

Cara Membuat :

  1. cuci daging lalu potong-potong
  2. kentang kupas dicuci
  3. bumbu dihaluskan, kecuali daun kare
  4. tumis bumbu yang dihaluskan + bumbu yang tidak dihaluskan
  5. masukkan daging aduk rata tambahkan tomat
  6. santan masukkan, aduk, masak hingga daging lunak
  7. tambahkan santan kental biarkan sampai mendidih, aduk, masukkan kentang
  8. setelah kentang masak, angkat, hidangkan dalam baki/mangkuk

Roti Jala

Bahan :

  • tepung terigu 250 gr
  • Garam ½ sdt
  • Telur 1 btr
  • Air 300 cc

Cara Membuat :

  1. bentuklah adonan (masukkan tepung kedalam, lubangi tengahnya) masukkan telur kedalam lubang tersebut aduklah sampai rata, sambil masukkan sedikit demi sedikit air
  2. masukkan garam
  3. jika adonan berbintil, saring
  4. cetaklah dengan memakai cetakan roti jala, atau daun pisang yang dibentuk kerucut

Anda bisa mengkombinasikan roti jala dengan kari ayam di atas

- Jintan kasar/halus 1 helai
- Kemiri 1 bh
- Kapulaga 1 bh
- Bunga lawang 1 pelepah
- Cengkeh 2 buah

Cara Membuat :

  1. daging direbus sampai lunak iris berbentuk dadu – dadu 1 x 1 cm
  2. soun direndam dalam air, potong 5 cm
  3. sayur kol, kentang, wortel, potong dengan ukuran 2x2 cm dan buncis 2 cm
  4. bumbu dihaluskan kecuali daun jeruk , sereh, laos, bunga lawang, kapulaga, kayu manis, dan cengkih
  5. setelah daging lunak, masukkan bumbu yang telah dihaluskan sayuran yang telah dipotong wortel, kentang, buncis, kol, dan terakhir santan kental dan soun

Cara membuat :

  1. ikan dibersihkan dan dicuci, kemudian dilumuri ½ sdm garam dan ½ sdm air garam
  2. bumbu - bumbu dihaluskan kecuali cabe rawit ½ daun kemangi, lalu dilumuri pada ikan
  3. ikan dibungkus dengan daun pisang berbentuk panjang dan disemat dengan biting
  4. kemudian dikukus sampai masak
